iB Food’s new ambient Seafood Salad allows
the creative chef to develop an impressive fish menu whilst enjoying the
convenience and reliability of a premium quality product requiring minimum
preparation time.
The
versatility of the product is due to the unique way in which it is preserved. A
traditional and authentic process of blanching and steaming retains the true
texture and appearance of the seafood whilst preventing excess water in the
finished dish. The ingredients are then preserved in brine to provide greater
scope in recipe development, unlike most other products of this type which are
kept in oil and vinegar.
The seafood contains a colourful mix of
popular shellfish including squid, octopus, calamari, prawns and mussels and can
be eaten cold dressed with salad leaves or combined with a delicate sauce to
enhance the natural flavour and quality of the fish. Alternatively, the seafood
can be used in risotto and pasta dishes, as antipasti or as a garnish for other
fish dishes.
Isabella Gambuzzi, Managing Director for iB
Food explained:
"Some chefs have shied away from this
type of product because the usual method of preserving the seafood in oil and
vinegar adversely affects the flavour of the fish and therefore severely limits
how the salad can be used."
"We don’t have that problem with our
Seafood Salad. Because of the way in which it is preserved, the delicate
flavours and original texture of the shellfish are retained - you can therefore
be much more adventurous when developing recipes. Infact, some customers are
using the seafood salad as a topping for pizzas and crostini which is how it is
eaten in Italy in the more sophisticated pizzerias to tempura style."
