A recent addition to iB Food's range of authentic vegetable dishes is Cipolline Aceto Balsamico or baby Borretane onions dressed in balsamic vinegar, olive oil and fresh herbs - a flat topped Italian onion with a
far sweeter and more delicate flavour than other varieties more commonly available in the UK.

These small white onions are no more than 1" tall and are extremely tasty served hot or cold as a perfect accompaniment to a meat dish, such as iB Food's Lamb or Pork Stincotto. When caramelised in their own juices, the onions take on a superb richness in flavour and colour and are particularly good served with pan fried duck breast on mixed lettuce leaves or other similar creative recipes.

Also ideal as a base for a vegetarian meal, iB Food recommends serving the onions in a puff pastry case with a giardiniere of fresh vegetables or a medley of mushrooms. Alternatively, blend the onions to make a delicious piquant sauce to accompany smoked salmon.
